Bhindi/Okra may not be everyone’s favorite but I love it. Specially the Bhindi masala with curd / butter milk.
Today I tried my conventional bhindi masala recipe in oven to make it in lesser oil.
I must say, it came out really well and its an entire new tasty recipe.
So, here is the list of all ingredients required for this recipe:
For Crispy Bhindi
1 – Bhindi 250- gram
2- Garlic 6-7 cloves
3- Green chillies – 2 medium sized
4- Coriander Powder (Dhania) – 1 tbsp
5- Turmeric Powder (Haldi) – 1/2 tsp
6- Red Chilli Powder – 1/2 tsp
7- Salt – 1 tsp
8- Lemon Juice – 1 tbsp
9- Oil -2 tbsp
For Curry
1- Onion – 1 medium size
2- Tomato – 2 medium size
3- Oil – 1 tbsp
4- Cumin Seeds (Jeera) – 1/2 tsp
5- Mustard Seeds (Rai) – 1/2 tsp
6- Salt – 1 tsp
7- Coriander Powder – 1/2 tsp
8- Besan (Gram Flour) – 1/2 tbsp
9- Curd – 1 tbsp
10- Chaat Masala – 1 tsp
1- Wash and pat dry okras/bhindiĀ on cloth.
2- Remove the stalk and slit okras lengthwise.
3- Now peel the garlic cloves. To peel easily microwave the cloves for 20 seconds and peel immediately.
4- Add chopped green chillies and garlic cloves in grinder to make chilli garlic paste.
5- Preheat the oven at 180 deg C for 10 minutes.
6- While preheating, In a bowl, add chilli garlic paste, 1 tbsp coriander powder, 1/2 tsp haldi, 1/2 tsp red chilli, 1 tsp salt, lemon juice. Mix well.
7- Sprinkle the paste on sliced bhindi and mix the paste evenly on okras.
8- Spread okras mixture evenly over a baking tray lined with parchment paper and Drizzle some oil over top.
9- Now bake the bhindis in preheated oven for 15- 20 minutes at 180 deg C. Bake till the okra gets crispy.
To Make Curry
1- Add chopped onion and chopped tomato in a grinder and make a thick paste.
2- in a pan, heat 1 tbsp oil and Add 1/2 tsp jeera, 1/2 tsp mustard seeds.
3- When it splutters, add onion tomato paste. Fry and cook the paste till it leaves the oil.
4- Add 1 tsp salt, 1/2 tsp dhania powder, 1/2 tbsp besan and little water. Mix well and cook for 2 minutes.
5- Add 1 tbsp curd, 1 tsp chaat masala. Mix well.
6- Now add baked bhindi to this curry.
7- Mix until well blended.
