Vegetable Fried Rice Recipe in Indian Style

Ingredients:

Rice 1cup (around 1 bowl boiled rice)
Garlic cloves chopped 4-5
Onion chopped 2 medium sized
Capsicum chopped 1 medium sized
Cabbage chopped 1 cup
Tomatoes chopped 2 medium sized
Oil 2 tbsp
Rai (Mustard Seeds) 1 tsp
Bayleaf/Tezpatta 1
Roasted Cumin Seeds (bhuna Jeera) ½ tsp
Cinnamon (Dalchini) 1” stick
Coriander (Dhaniya) powder 1tsp
Salt to taste

INSTANT MIX MASALA
(1.5  tsp SAMBHAR MASALA + 2.5 tsp PAVBHAJI MASALA)

Method:

  1. Take a kadai, heat oil on high flame, add rai, jeera.
  2. Saute it for few seconds, or till it splutters, then add tez patta and dalchini and sauté it for 1 min.
  3. Add chopped garlic, onion, cabbage, capsicum. Mix it and fry for 2 min.Add chopped tomatoes and again fry it for sometime. Don’t overcook the veggies.
  4. Add dhaniya powder and little salt.
  5. Add spice mix which we made. Ratio of Salt: Instant Mix Masala = 2:4 (2tsp salt and 4 tsp masala)
  6. Add cooked rice, mix it properly so that all the veggies and spices mixin the rice nicely.
  7. Garnish it with coariander leaves.
  8. Serve hot with chutney, raita or pickle.
