How to make Wholewheat Atta Bread at home

Ingredients for Wholewheat Atta Bread with Flax seeds:
Whole wheat flour 2 cups
All-purpose flour ½ cup
Milk Powder ¼ cup
Yeast 1.5 tsp
Powdered Sugar 2 tbsp
Salt ½ tsp
Oil 1 tbsp
Butter 1 tbsp
Flaxseed 1 tbsp
Lukewarm water (1 cup for yeast activation, 3 tbsp for flaxseeds soaking and ¼ cup for kneading)

Method for making Whole wheat Atta bread with flax seeds:
1- Add 1.5 tsp yeast and 2 tbsp powdered sugar in a bowl and add 1 cup of lukewarm water in it. Keep aside and wait for activation. It takes around 10 minutes. Make sure you do not disturb the bowl.
2- Add 1 tbsp ground flaxseed and 3 tbsp water in a bowl and keep it aside for 10 minutes. It will turn gelatinous.
3- Now add 2 cups atta, ½ cup maida, 1/2 tsp salt, ¼ cup milk powder, and 1 tbsp oil and 1 tbsp butter in a large mixing bowl.
4- Add activated yeast mixture and flax seeds mixture in the above ingredients and knead the soft dough by adding lukewarm water gradually if required.
5- Knead the dough for a minimum of 10 minutes.
6- Cover and let rise in a warm place until doubled.

7- Punch down and place dough on a flat surface and knead 50 turns. It takes around 10 minutes. You can grease your hand using butter if required.
8- Place in greased 9 x 5-inch loaf pans, and allow it to rise until dough has topped the pan by one inch.
9- Sprinkle flaxseeds, oats on top, and brush the top with milk.
10- Bake at 200 degrees C for 20 minutes in the preheated oven, do not overbake. Lightly brush the top of the loaf with melted butter or oil when done to prevent the crust from getting hard. Cool completely before slicing.
11- Enjoy your homemade healthy whole-wheat flour.
