How to make Snacks from Leftover rice.
In this recipe, we will be making steamed rice balls using leftover rice.
Servings: approx. 24 balls
Ingredients:
· Boiled Rice 1 cup
· Raw Potato 1 medium-sized
· Sooji/ Semolina ¼ cup
· Onion 1 small sized
· Garam Masala ½ tsp
· Red chili powder your choice
· Oil 1 tbsp
· Mustard Seeds/Rai ½ tsp
· Curry leaves 10-12
· Coriander Powder 2 tbsp
· Sambhar Masala 1 tbsp
· Coriander leaves for garnishing
· Chilli Sauce

Method:
1. Mash 1 cup boiled rice and take into a bowl.
2. Add 1 big sized grated potato into mashed rice.
3. Add ¼ cup semolina/sooji into it.
4. Add veggies like onion, the carrot of your choice. (preferably grated or very finely chopped veggies)
5. Add salt to taste and ½ tsp garam masala
6. Add a few drops of water and make a fine dough.
7. Now make small balls from the dough and keep aside.
8. Steam the balls in idli stand. I have used a microwave to steam it. It took only 4 minutes to steam the rice balls.
9. Now in Kadai, add 1 tbsp oil and make a tadka of ½ tsp rai/mustard seeds, curry leaves, dhania powder, sambhar masala (my choice), and finely chopped coriander.
10. Add these rice balls in it and coat the balls in this tadka.
11. Serve hot with chilly sauce or dhaniya chutney.
